This year, three of the Philippines top chefs, Rodito I. Dimatera Head Chef, Benjamin Zabala Native Delicacies Chef and Leandro T. Templonuevo Sous Chef, will be flown out to treat Sydney siders to their indigenous food. The dishes use produce from land, sea, field and forest, with influences and culinary procedures from the likes of China, Spain, Mexico and the United States.
